honey chicken kabobs




i'm no great chef but i thought it would be neat to share some of my favorite recipes. i try to cook dinner on nights i'm home and not at school - it saves money and i'd like to think it's healthier since i know what i'm eating. since we're always budgeting, a lot of the dishes i make consist of chicken (plus we try not to consume too much red meat), so you'll have to excuse the excessive chicken recipes i post on here.

pictured above was a recipe i got from allrecipes.com (i subscribe to them) and i decided to take a go at it for a Sunday bbq dinner. you can click the link for the exact recipe but i did make a few changes. first, if you're using wooden skewers like i do, be sure to soak them in water for at least half an hour so they don't burn while grilling. secondly, i combined the chicken and veggies on one skewer as opposed to separating them. due to personal preference, i didn't marinate the veggies, but i did brush it with the marinade at the end. i also added more veggies than the recipe called for - green peppers and mushrooms.

we paired the kabobs with parmesean orzo, which is very easy to make. i stir one cup of orzo with a tablespoon of unsalted butter over medium heat until orzo is slightly golden brown. then i turn the heat up to high, mix in a can of chicken broth (organic and free range) and bring it to a boil. after it starts boiling, cover with lid, and turn down to low and let it simmer for about 25 mins. (sometimes i'll add a teaspoon of dried basil when i put in the chicken broth for more flavor) after 25 mins is up, i dump in a 3/4 cup of grated pamesean cheese and stir until orzo is evenly coated. throw in a dash of cracked pepper and voila! parmesean orzo done.
